- 250g pasta (penne or fusilli)
- 150g sausage, sliced or crumbled
- 100g chorizo, sliced
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup shredded mozzarella cheese
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 small onion, finely chopped
- 1/4 teaspoon chili flakes (optional)
- Salt and pepper to taste
- Fresh basil or parsley, chopped (for garnish)
Instructions
- Cook pasta according to package instructions until al dente. Drain and set aside.
- Heat olive oil in a large skillet over medium heat.
- Add onion and garlic, sauté until soft and fragrant, about 3 minutes.
- Add sausage and chorizo, cook until browned and cooked through, about 5 minutes.
- Stir in sun-dried tomatoes and chili flakes, cook for 1–2 minutes.
- Add cooked pasta to the skillet and toss to combine.
- Sprinkle mozzarella over the pasta and stir until melted and evenly distributed.
- Season with salt and pepper to taste.
- Garnish with fresh basil or parsley and serve immediately.

- Use spicy or mild sausage depending on preference.
- Sun-dried tomatoes packed in oil add extra flavor.
- For a creamier dish, add a splash of cream or milk.
