Description

A rich, creamy, and indulgent vegan chocolate mousse made with just four ingredients and topped with crunchy pistachios. Perfect for a quick dessert that’s both healthy and satisfying.


Ingredients

  • 1 cup canned full-fat coconut milk (chilled overnight)
  • 1/2 cup dairy-free dark chocolate chips
  • 2 tbsp maple syrup (or to taste)
  • 2 tbsp chopped pistachios (for topping)

Instructions

  1. Chill the coconut milk in the refrigerator overnight to separate the cream from the liquid.
  2. Scoop out the thick coconut cream into a mixing bowl and beat it with a hand mixer until light and fluffy.
  3. Melt the dark chocolate chips using a double boiler or microwave in 30-second intervals, stirring until smooth. Let it cool slightly.
  4. Fold the melted chocolate and maple syrup into the whipped coconut cream until fully combined.
  5. Spoon the mousse into serving cups and refrigerate for at least 1 hour to set.
  6. Top with chopped pistachios before serving.
