- 1 cup canned full-fat coconut milk (chilled overnight)
- 1/2 cup dairy-free dark chocolate chips
- 2 tbsp maple syrup (or to taste)
- 2 tbsp chopped pistachios (for topping)
Instructions
- Chill the coconut milk in the refrigerator overnight to separate the cream from the liquid.
- Scoop out the thick coconut cream into a mixing bowl and beat it with a hand mixer until light and fluffy.
- Melt the dark chocolate chips using a double boiler or microwave in 30-second intervals, stirring until smooth. Let it cool slightly.
- Fold the melted chocolate and maple syrup into the whipped coconut cream until fully combined.
- Spoon the mousse into serving cups and refrigerate for at least 1 hour to set.
- Top with chopped pistachios before serving.
Notes
- Use high-quality dark chocolate for the best flavor.
- Optional: add a pinch of sea salt or vanilla extract for extra depth.
