Description

Juicy, tangy, and full of flavor, these Air Fryer (or Grilled) Dill Pickle Chicken Skewers are the perfect blend of zesty marinade and crispy edges. Served with a creamy dill yogurt dip, they’re ideal for dinner, snacks, or party platters.


Ingredients

  • 1.5 pounds chicken thighs, boneless skinless
  • 1 cup dill pickle juice
  • 1/2 cup dill pickles, chopped
  • 1/2 cup plain Greek yogurt
  • 2 tablespoons fresh dill, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • Wooden or metal skewers

Instructions

  1. Preheat air fryer to 400°F or grill to medium-high heat.
  2. In a bowl, combine chicken pieces with pickle juice, garlic powder, onion powder, and black pepper. Cover and marinate in the fridge for at least 2 hours or overnight.
  3. Lightly grease air fryer basket or oil grill grates. Soak wooden skewers in water if using.
  4. Thread chicken onto skewers, alternating with chopped pickles if desired. Brush lightly with olive oil.
  5. Cook skewers in air fryer for 10–12 minutes, flipping halfway, or grill 8–10 minutes per side until golden and cooked through.
  6. Mix Greek yogurt with chopped dill and a pinch of salt for dipping sauce.
  7. Serve hot with dip and extra pickles or sides of choice.
