- 1.5 pounds chicken thighs, boneless skinless
- 1 cup dill pickle juice
- 1/2 cup dill pickles, chopped
- 1/2 cup plain Greek yogurt
- 2 tablespoons fresh dill, chopped
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- Wooden or metal skewers
Instructions
- Preheat air fryer to 400°F or grill to medium-high heat.
- In a bowl, combine chicken pieces with pickle juice, garlic powder, onion powder, and black pepper. Cover and marinate in the fridge for at least 2 hours or overnight.
- Lightly grease air fryer basket or oil grill grates. Soak wooden skewers in water if using.
- Thread chicken onto skewers, alternating with chopped pickles if desired. Brush lightly with olive oil.
- Cook skewers in air fryer for 10–12 minutes, flipping halfway, or grill 8–10 minutes per side until golden and cooked through.
- Mix Greek yogurt with chopped dill and a pinch of salt for dipping sauce.
- Serve hot with dip and extra pickles or sides of choice.
