Description

A warm, cinnamon-spiced Apple Fritter Loaf Cake layered with tender apples, brown sugar, and a buttery streusel topping. Perfectly moist and topped with a sweet vanilla glaze.

  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar (divided)
  • 1 3/4 teaspoons baking powder
  • 2 teaspoons ground cinnamon (divided)
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/2 cup milk
  • 2 teaspoons vanilla extract
  • 2 medium apples, peeled and chopped
  • 1/3 cup melted butter (plus 2 tablespoons cold for topping)
  • 1/2 cup powdered sugar
  • 12 tablespoons heavy cream or milk

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×5 inch loaf pan with parchment paper.
  2. In a medium bowl, whisk flour, baking powder, salt, and 1 teaspoon cinnamon. In another bowl, mix eggs, granulated sugar, melted butter, milk, and vanilla until smooth. Combine wet and dry ingredients just until incorporated.
  3. In a small bowl, mix apples with 1/4 cup brown sugar and 1 teaspoon cinnamon. In another bowl, combine remaining 1/4 cup brown sugar, 1 teaspoon cinnamon, and 2 tablespoons cold butter using a fork until crumbly.
  4. Pour half the batter into the loaf pan, layer with half the apple mixture and some streusel. Repeat with remaining batter, apples, and streusel. Swirl gently with a knife.
  5. Bake for 50–60 minutes or until a toothpick comes out clean. Cool in the pan for 10 minutes, then transfer to a wire rack.
  6. Whisk powdered sugar with 1–2 tablespoons cream or milk until smooth. Drizzle over slightly cooled loaf.
  7. Slice and serve warm or at room temperature.

Notes

  • Use tart apples like Granny Smith for best flavor contrast.
  • Do not overmix the batter to keep the loaf soft and tender.
  • Store tightly wrapped at room temperature for up to 3 days.
  • Can be frozen up to 2 months when wrapped well.
