- 2 medium sweet potatoes, peeled and cubed
- 1 pound ground chicken
- 1 large red onion, sliced into wedges
- 3 garlic cloves, minced
- 1 large avocado, ripe
- Juice of 2 limes
- 1/2 cup fresh cilantro, chopped
- 3 tablespoons olive oil
- 1 teaspoon ground cumin
- Salt and black pepper, to taste
Instructions
- Preheat oven to 425°F and line a baking sheet with parchment paper.
- Toss sweet potatoes and onions with 1 tablespoon olive oil, cumin, salt, and pepper.
- Season ground chicken with salt and pepper, form into small meatballs.
- Arrange veggies and meatballs on baking sheet and roast for 25 minutes, flipping halfway.
- While roasting, blend avocado, garlic, lime juice, cilantro, remaining olive oil, and a pinch of salt until smooth.
- Once cooked, drizzle the avocado mojo over the roasted ingredients.
- Divide into bowls, garnish with fresh cilantro, and serve warm.
