Description

Crispy, golden bite-sized onion petals in a seasoned coating, fried until shatteringly crisp and served with a cool, tangy dip. Party-perfect and irresistibly snackable.


Ingredients

  • 2 large yellow onions, cut into bite-sized petals
  • 1 1/2 cups all-purpose flour
  • 1/4 cup cornstarch
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon fine salt, plus more for finishing
  • 1/2 teaspoon black pepper
  • 2 large eggs, whisked
  • 1 cup milk or buttermilk
  • Vegetable oil, for frying
  • Ranch or spicy dipping sauce, for serving

Instructions

  1. Slice and soak: Cut onions into bite-sized petals and soak in ice-cold water for 10 minutes, then pat dry.
  2. Make the dry mix: In a bowl, whisk flour, cornstarch, garlic powder, paprika, cayenne, salt, and black pepper.
  3. Make the wet mix: In a second bowl, whisk eggs with milk until smooth.
  4. Heat oil: Pour 2 to 3 inches of oil into a deep pot and heat to 350°F (175°C). Set a wire rack or paper towel–lined tray nearby.
  5. Double-dip: Dredge onion petals in the dry mix, dip in the egg mixture, then return to the dry mix. Press to adhere and shake off excess.
  6. Fry in batches: Fry coated petals for 2 to 3 minutes until deep golden and crisp. Do not overcrowd the pot.
  7. Drain and season: Transfer to the rack or tray and sprinkle lightly with salt while hot.
  8. Serve: Pile onto a platter and serve immediately with ranch or a spicy dipping sauce.

Notes

  • For extra crunch, let coated onions rest 1 minute before frying.
  • Maintain 340 to 360°F oil for even browning and minimal grease.
  • Air-fryer option: 375°F for 10 to 12 minutes, shaking once.
  • Bake option: 425°F for 18 to 20 minutes, flipping halfway.
