Description
A cozy, savory twist on a classic burger, this Bacon Cheeseburger Loaded Sweet Potato combines juicy ground beef, melty cheddar, and vibrant toppings all stuffed into a tender roasted sweet potato.
Ingredients
- Sweet Potatoes: 4 medium, scrubbed and pierced with a fork
- Ground Beef: 1 pound, lean
- Cheddar Cheese: 1 cup, shredded
- Red Onion: 1 small, finely diced
- Tomato: 1 medium, chopped
- Yellow Mustard: 2 tablespoons
- Ketchup: 2 tablespoons
- Garlic Powder: 1 teaspoon
- Salt: 1 teaspoon
- Black Pepper: ½ teaspoon
- Olive Oil: 1 tablespoon
- Pickles (optional): Sliced
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment or foil.
- In a skillet over medium heat, warm the olive oil. Add ground beef, garlic powder, salt, and pepper. Cook until browned, then stir in ketchup and mustard. Remove from heat.
- Place sweet potatoes on the prepared baking sheet and roast for 45–50 minutes, or until fork-tender. Remove and let cool slightly.
- Slice each sweet potato open down the center. Fluff the insides with a fork, creating space. Add the ground beef mixture and top generously with shredded cheese.
- Place stuffed potatoes under the broiler for 2–3 minutes, just until the cheese is bubbly and golden.
- Top with diced red onion, chopped tomato, and pickles if using. Add an extra drizzle of ketchup or mustard for flair.
- Serve warm, straight from the oven with a crisp side salad or fries if desired.
Notes
- Bake sweet potatoes directly on the oven rack for crispier skins.
- Use a cast iron skillet for better browning on your beef.
- Don’t skip the broiler—it’s the secret to gooey, irresistible cheese.
