Baked Apple Pie Rice Paper Rolls are a creative and healthier twist on traditional apple pie. These crispy rolls are filled with spiced apples and cinnamon, baked to golden perfection for a delightful dessert or snack.

- 8 rice paper wrappers
- 2 medium apples, peeled, cored, and diced
- 2 tablespoons brown sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg
- 1 tablespoon lemon juice
- 1 tablespoon unsalted butter, melted
- 1/4 cup chopped walnuts or pecans (optional)
- Cooking spray or a little oil for brushing
Instructions
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a bowl, mix diced apples, brown sugar, cinnamon, nutmeg, lemon juice, and nuts if using.
- Dip one rice paper wrapper in warm water for about 10 seconds until pliable. Place on a clean surface.
- Place 2-3 tablespoons of the apple mixture near the bottom edge of the wrapper.
- Fold in the sides and roll tightly towards the top to seal, like a spring roll.
- Brush each roll lightly with melted butter or spray with cooking oil.
- Place rolls on the baking sheet and bake for 15–20 minutes, turning halfway, until golden and crispy.
- Remove and cool slightly before serving. Optionally dust with powdered sugar.
