- 12 ounces dry penne pasta
- 2 pints cherry tomatoes, whole
- 8 ounces feta cheese block
- 1/3 cup olive oil
- 3 garlic cloves, peeled and lightly smashed
- 1/4 cup fresh basil, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat the oven to 400 degrees Fahrenheit and bring a large pot of salted water to a boil.
- Place the cherry tomatoes in a large baking dish and nestle the feta cheese block in the center. Add the garlic cloves around the cheese.
- Drizzle the olive oil evenly over the tomatoes and feta, then sprinkle with salt and black pepper.
- Bake for 30 minutes, until the tomatoes burst and the feta softens.
- While the dish bakes, cook the penne pasta according to package instructions, about 10 minutes, until al dente. Drain well.
- Remove the baking dish from the oven and stir the feta and tomatoes together until creamy.
- Add the cooked pasta and chopped basil to the baking dish and toss until evenly coated. Serve warm.
Notes
- Roast the tomatoes until deeply blistered for maximum sweetness.
- Reserve a splash of pasta water to loosen the sauce if needed.
- Use a block of feta in brine for the creamiest texture.
