Description

Creamy baked feta pasta with roasted cherry tomatoes, garlic, and fresh basil, all tossed with tender penne for a rich yet fresh weeknight dinner.


Ingredients

  • 12 ounces dry penne pasta
  • 2 pints cherry tomatoes, whole
  • 8 ounces feta cheese block
  • 1/3 cup olive oil
  • 3 garlic cloves, peeled and lightly smashed
  • 1/4 cup fresh basil, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit and bring a large pot of salted water to a boil.
  2. Place the cherry tomatoes in a large baking dish and nestle the feta cheese block in the center. Add the garlic cloves around the cheese.
  3. Drizzle the olive oil evenly over the tomatoes and feta, then sprinkle with salt and black pepper.
  4. Bake for 30 minutes, until the tomatoes burst and the feta softens.
  5. While the dish bakes, cook the penne pasta according to package instructions, about 10 minutes, until al dente. Drain well.
  6. Remove the baking dish from the oven and stir the feta and tomatoes together until creamy.
  7. Add the cooked pasta and chopped basil to the baking dish and toss until evenly coated. Serve warm.

Notes

  • Roast the tomatoes until deeply blistered for maximum sweetness.
  • Reserve a splash of pasta water to loosen the sauce if needed.
  • Use a block of feta in brine for the creamiest texture.
