- 6 bone-in, skin-on chicken thighs
- 3 tablespoons Dijon mustard
- 2 tablespoons whole grain mustard
- 1/4 cup honey
- 2 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a baking dish.
- In a bowl, whisk together Dijon mustard, whole grain mustard, honey, minced garlic, rosemary, olive oil, salt, and pepper.
- Place chicken thighs in the baking dish, skin side up. Spoon or brush the sauce generously over each piece.
- Let chicken marinate in the sauce for 15–30 minutes if time allows.
- Bake uncovered for 35–45 minutes, basting once or twice, until chicken is cooked through and golden.
- Broil for the last 2–3 minutes for a deeper caramelized finish.
- Let rest 5 minutes before serving with extra sauce drizzled on top.

- Use a meat thermometer to ensure chicken reaches 165°F.
- Swap rosemary for thyme or oregano if desired.
