- 4 boneless skinless chicken thighs
- 1 cup grated parmesan cheese
- 1 cup plain breadcrumbs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried Italian herbs
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 large eggs
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 400°F (200°C). Lightly grease a baking sheet or prepare a wire rack on top of the tray.
- In one bowl, whisk the eggs. In another, combine parmesan, breadcrumbs, garlic powder, onion powder, Italian herbs, salt, and pepper.
- Dip each piece of chicken into the egg, then into the breadcrumb-parmesan mix. Press well to coat. Repeat for extra crispiness if desired.
- Place coated chicken on the prepared baking sheet or rack. Drizzle or brush with olive oil.
- Bake for 25–30 minutes, or until chicken is golden and reaches 165°F internally.
- Let rest for 5 minutes before serving. Enjoy with your favorite sides or salad.
