Description

Crispy on the outside, juicy on the inside, this baked parmesan crusted chicken is a weeknight hero. Coated in a cheesy, herby breadcrumb mix and baked to golden perfection, it’s easy, flavorful, and crowd-pleasing.


Ingredients

  • 4 boneless skinless chicken thighs
  • 1 cup grated parmesan cheese
  • 1 cup plain breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried Italian herbs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 large eggs
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a baking sheet or prepare a wire rack on top of the tray.
  2. In one bowl, whisk the eggs. In another, combine parmesan, breadcrumbs, garlic powder, onion powder, Italian herbs, salt, and pepper.
  3. Dip each piece of chicken into the egg, then into the breadcrumb-parmesan mix. Press well to coat. Repeat for extra crispiness if desired.
  4. Place coated chicken on the prepared baking sheet or rack. Drizzle or brush with olive oil.
  5. Bake for 25–30 minutes, or until chicken is golden and reaches 165°F internally.
  6. Let rest for 5 minutes before serving. Enjoy with your favorite sides or salad.
