- 3 ripe bananas, mashed
- 1 and 1/2 cups all-purpose flour
- 1/2 cup Greek yogurt
- 1/2 cup granulated sugar
- 2 large eggs
- 1/3 cup unsalted butter, melted
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
- In a large bowl, whisk together the mashed bananas, eggs, melted butter, Greek yogurt, vanilla extract, and sugar until smooth.
- In a separate bowl, mix the flour, baking soda, salt, and cinnamon.
- Fold the dry ingredients into the wet mixture just until combined. Do not overmix.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50–60 minutes or until a toothpick inserted into the center comes out clean. Tent with foil if browning too quickly.
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Slice and enjoy warm or at room temperature.
