- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 4 large eggs
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup sour cream
- 1 teaspoon vanilla extract
- 3 ripe bananas, mashed
- Optional: 1/2 cup chopped walnuts or pecans
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan or two 8-inch round pans.
- In a large mixing bowl, cream the butter and sugar together until light and fluffy.
- Add the eggs one at a time, beating well after each addition.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the butter mixture, alternating with sour cream, beginning and ending with the dry ingredients.
- Stir in the vanilla extract and mashed bananas until just combined. Fold in nuts if using.
- Pour the batter into the prepared pan(s) and smooth the top.
- Bake for 35–40 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before serving.
Notes
- For extra banana flavor, use overripe bananas with brown spots.
- This cake pairs wonderfully with a cream cheese or brown butter frosting.
