Description

Ingredients

  • 6 slices thick brioche or challah bread
  • 3 large eggs
  • 1 cup whole milk
  • 2 ripe bananas, mashed
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 2 tablespoons butter (for frying)
  • Maple syrup and sliced bananas (for topping)

Instructions

  1. Heat a skillet over medium-low and add a small amount of butter.
  2. In a bowl, whisk together eggs, milk, mashed bananas, cinnamon, vanilla, and salt until smooth.
  3. Lightly grease your pan or griddle with butter.
  4. Dip each bread slice into the banana-egg mixture, coating both sides without soaking too long.
  5. Place the soaked slices in the skillet and cook for 3–4 minutes on each side until golden brown.
  6. Stack the cooked slices on a plate and top with sliced bananas and maple syrup.
  7. Serve warm and enjoy!

Notes

  • Use day-old bread for better texture.
  • Don’t soak the bread too long or it may fall apart.
  • Cook on medium-low for a soft inside and golden outside.
