- 6 slices thick brioche or challah bread
- 3 large eggs
- 1 cup whole milk
- 2 ripe bananas, mashed
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- Pinch of salt
- 2 tablespoons butter (for frying)
- Maple syrup and sliced bananas (for topping)
Instructions
- Heat a skillet over medium-low and add a small amount of butter.
- In a bowl, whisk together eggs, milk, mashed bananas, cinnamon, vanilla, and salt until smooth.
- Lightly grease your pan or griddle with butter.
- Dip each bread slice into the banana-egg mixture, coating both sides without soaking too long.
- Place the soaked slices in the skillet and cook for 3–4 minutes on each side until golden brown.
- Stack the cooked slices on a plate and top with sliced bananas and maple syrup.
- Serve warm and enjoy!
Notes
- Use day-old bread for better texture.
- Don’t soak the bread too long or it may fall apart.
- Cook on medium-low for a soft inside and golden outside.
