- 3 pounds beef chuck roast
- 1 large yellow onion, sliced
- 4 cloves garlic, minced
- 2 to 3 chipotle peppers in adobo, chopped
- 1 cup BBQ sauce
- 1 cup beef broth
- 2 tablespoons apple cider vinegar
- 2 tablespoons brown sugar
- 1 teaspoon paprika
- Salt and black pepper to taste
- 6 brioche buns, toasted
Instructions
- Set your slow cooker to low. Heat a skillet over medium-high heat with a drizzle of oil.
- Season the beef with salt and pepper. Sear it on all sides until browned, about 4 minutes per side.
- In the slow cooker, add onions, garlic, chipotle peppers, BBQ sauce, broth, vinegar, brown sugar, and paprika. Stir to combine.
- Place the seared beef into the slow cooker and spoon some sauce over the top.
- Cover and cook on low for 8 hours, or until the beef is fork-tender.
- Remove the beef, shred it, and return it to the slow cooker to soak in the sauce.
- Serve the beef on toasted brioche buns with your favorite toppings.
Notes
- Toast buns in a buttered skillet for added flavor and crunch.
- Use fewer chipotle peppers for a milder version.
- Store leftovers in an airtight container for up to 4 days or freeze for 3 months.
