- 2 cups Biscoff cookies, crushed (about 30 cookies)
- 6 tablespoons unsalted butter, melted
- 24 ounces cream cheese (3 blocks), softened
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 1 1/2 teaspoons vanilla extract
- 1/2 cup heavy cream
- 1 tablespoon lemon juice
- 1/4 cup powdered sugar (for optional topping)
Instructions
- Preheat oven to 325°F (163°C). Wrap the outside of a 9-inch springform pan with foil to prepare for a water bath.
- Mix crushed Biscoff cookies with melted butter in a bowl until fully combined.
- Press the cookie mixture into the bottom and slightly up the sides of the springform pan using the bottom of a glass.
- In a large bowl, beat the cream cheese until smooth. Add granulated sugar, brown sugar, vanilla extract, lemon juice, and heavy cream. Beat until creamy and lump-free.
- Pour the cream cheese mixture into the prepared crust. Tap the pan gently to release air bubbles.
- Place the springform pan in a larger baking tray. Fill the tray with hot water halfway up the sides of the springform pan.
- Bake for 60 minutes, or until the center is slightly jiggly.
- Turn off the oven and leave the cheesecake inside for 1 hour.
- Remove and cool completely on a wire rack, then refrigerate for at least 6 hours or overnight.
- Before serving, top with extra crushed Biscoff cookies and a drizzle of melted Biscoff spread if desired.
