- 1 cup semisweet or dark chocolate chips
- 1/2 cup unsweetened cocoa powder
- 1/2 cup almond butter
- 2 large eggs
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup chopped dried cherries
- 1/4 cup chopped dark chocolate or chocolate chunks
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Melt chocolate chips in a microwave-safe bowl in 30-second intervals, stirring until smooth.
- In a large bowl, whisk together almond butter, sugar, and eggs until smooth.
- Add melted chocolate, cocoa powder, vanilla extract, and salt; mix well to combine.
- Fold in chopped dried cherries and chocolate chunks.
- Drop spoonfuls of batter onto the prepared baking sheet, spacing about 2 inches apart.
- Bake for 10–12 minutes until cookies are set but still soft in the center.
- Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- Use fresh or frozen cherries if preferred, but reduce added sugar accordingly.
- Store cookies in an airtight container at room temperature for up to 3 days.
- For extra fudginess, slightly underbake the cookies.
