Description

A comforting braised chicken dish with tender meat simmered in a rich savory sauce with carrots, onions, and herbs.


Ingredients

  • 1.5 kg chicken pieces, bone-in
  • 3 medium carrots, sliced
  • 2 large onions, chopped
  • 4 garlic cloves, crushed
  • 2 cups chicken broth
  • 3 tablespoons olive oil
  • 2 tablespoons tomato paste
  • 3 sprigs fresh thyme
  • 2 bay leaves
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions

  1. Heat a large skillet or Dutch oven over medium heat.
  2. Season the chicken pieces with salt and black pepper.
  3. Add olive oil and sear the chicken until golden on all sides, then remove and set aside.
  4. In the same pot, cook onions, carrots, and garlic until softened.
  5. Stir in tomato paste, then return the chicken to the pot.
  6. Add chicken broth, thyme, and bay leaves.
  7. Cover and simmer on low heat for 45 minutes until the chicken is tender.
  8. Taste and adjust seasoning if needed, then let the sauce thicken slightly.
  9. Serve warm with your favorite side.

  • Keep the heat low while braising to maintain tenderness.
