- 1.5 kg chicken pieces, bone-in
- 3 medium carrots, sliced
- 2 large onions, chopped
- 4 garlic cloves, crushed
- 2 cups chicken broth
- 3 tablespoons olive oil
- 2 tablespoons tomato paste
- 3 sprigs fresh thyme
- 2 bay leaves
- 1 teaspoon salt
- 1 teaspoon black pepper
Instructions
- Heat a large skillet or Dutch oven over medium heat.
- Season the chicken pieces with salt and black pepper.
- Add olive oil and sear the chicken until golden on all sides, then remove and set aside.
- In the same pot, cook onions, carrots, and garlic until softened.
- Stir in tomato paste, then return the chicken to the pot.
- Add chicken broth, thyme, and bay leaves.
- Cover and simmer on low heat for 45 minutes until the chicken is tender.
- Taste and adjust seasoning if needed, then let the sauce thicken slightly.
- Serve warm with your favorite side.
