- 2 thick-cut slices sourdough bread
- 4 ounces brie cheese, sliced
- 1 cup mixed berries (blackberries, strawberries, blueberries)
- 1 tablespoon honey
- 1 teaspoon butter (optional)
- 1 teaspoon lemon juice
- Fresh thyme or mint, chopped (optional)
Instructions
- Warm a small saucepan over medium heat. Preheat toaster or oven if needed.
- Add mixed berries, honey, and lemon juice to the saucepan. Simmer for 5–7 minutes until berries burst and mixture thickens.
- Toast sourdough bread until golden and crisp. If using a skillet, melt a bit of butter and toast bread on each side.
- Place brie slices over hot toast so it begins to melt slightly.
- Spoon warm berry compote generously over the brie-topped toast.
- Optional: broil for 1–2 minutes to melt cheese further and caramelize berries.
- Sprinkle with chopped herbs and drizzle extra honey if desired. Serve immediately.
Notes
- Use room-temperature brie for better melting.
- Frozen berries can be used—just cook a bit longer.
- Add orange or lemon zest for extra brightness.
