Description

A bright and zesty pizza that brings together fresh mozzarella, thin lemon slices, and fragrant basil on a golden, crisp crust. It’s fresh, vibrant, and totally irresistible.


Ingredients

  • 2 ½ cups all-purpose flour
  • 1 packet (2 ¼ teaspoons) active dry yeast
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 2 tablespoons olive oil
  • ¾ cup warm water
  • 8 ounces fresh mozzarella
  • 12 lemons, thinly sliced
  • Handful of fresh basil leaves
  • 1 garlic clove, optional

Instructions

  1. Preheat oven to 475°F (245°C). If using a pizza stone, place it inside to heat.
  2. In a bowl, dissolve yeast and sugar in warm water. Let sit for 5 minutes until foamy. Add flour, salt, and olive oil. Mix and knead for about 8 minutes until smooth.
  3. Roll out the dough on a floured surface. Dust a pizza peel or sheet pan with flour or cornmeal.
  4. Transfer dough to your pan or stone. Lightly brush with olive oil. Top with thin lemon slices and torn mozzarella.
  5. Bake for 10–12 minutes until crust is golden and cheese is bubbling and browned.
  6. Remove from oven. Scatter fresh basil on top. Let cool for a few minutes.
  7. Slice and serve warm.

Notes

  • Use very thin lemon slices to avoid bitterness.
  • Blot mozzarella to reduce moisture and prevent sogginess.
  • Fresh basil is best added after baking to preserve flavor and color.
