- 6 cups broccoli florets, fresh or frozen
- 2 cups sharp cheddar cheese, shredded
- 1 can (10.5 oz) cream of mushroom soup
- 1/2 cup mayonnaise
- 2 eggs, lightly beaten
- 1 small onion, finely chopped
- 2 cups cooked rice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup breadcrumbs or crushed crackers
- 2 tablespoons butter, melted
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13 baking dish.
- In a large bowl, combine the soup, mayonnaise, eggs, onion, rice, salt, and pepper. Stir in the broccoli and 1 1/2 cups of cheese.
- Pour the mixture into the prepared baking dish and spread evenly.
- Top with the remaining 1/2 cup cheese. Mix breadcrumbs with melted butter and sprinkle on top.
- Bake uncovered for 35–40 minutes until bubbly and golden brown.
- Let rest for 5–10 minutes before serving.

- Add mushrooms or bell peppers for extra veggies.
