Description

Ingredients

  • 6 cups broccoli florets, fresh or frozen
  • 2 cups sharp cheddar cheese, shredded
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup mayonnaise
  • 2 eggs, lightly beaten
  • 1 small onion, finely chopped
  • 2 cups cooked rice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup breadcrumbs or crushed crackers
  • 2 tablespoons butter, melted

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 baking dish.
  2. In a large bowl, combine the soup, mayonnaise, eggs, onion, rice, salt, and pepper. Stir in the broccoli and 1 1/2 cups of cheese.
  3. Pour the mixture into the prepared baking dish and spread evenly.
  4. Top with the remaining 1/2 cup cheese. Mix breadcrumbs with melted butter and sprinkle on top.
  5. Bake uncovered for 35–40 minutes until bubbly and golden brown.
  6. Let rest for 5–10 minutes before serving.
