- 1 pound boneless skinless chicken breast, thinly sliced
- 4 cups broccoli florets, bite-size
- 1/3 cup low sodium soy sauce
- 1/2 cup chicken broth
- 2 tablespoons cornstarch
- 1 tablespoon brown sugar
- 1 tablespoon fresh ginger, finely grated
- 3 cloves garlic, minced
- 1 teaspoon toasted sesame oil
- 2 tablespoons vegetable oil, for stir frying
- 1/2 teaspoon red pepper flakes, optional
- 2 green onions, thinly sliced, for garnish
Instructions
- Make the sauce: In a small bowl whisk soy sauce, chicken broth, cornstarch, brown sugar, ginger, garlic, and sesame oil until smooth.
- Heat the pan: Place a wok or large skillet over medium high heat until a drop of water sizzles on contact.
- Sear the chicken: Add 1 tablespoon vegetable oil, then half the chicken in a single layer. Cook 2 to 3 minutes per side until just cooked. Transfer to a plate and repeat with remaining chicken using the remaining oil.
- Tender crisp the broccoli: Add broccoli and a splash of water to the hot pan. Stir fry 2 to 3 minutes until bright green and crisp tender.
- Sauce it up: Return chicken and any juices to the pan. Whisk the sauce again and pour it in. Toss constantly 1 to 2 minutes until the sauce is glossy and thickened.
- Finish: Sprinkle red pepper flakes if using and half the green onions. Toss to combine and adjust seasoning to taste.
- Serve: Plate immediately and garnish with remaining green onions. Enjoy over steamed jasmine rice or noodles.
Notes
- Prep ahead: Slice chicken and mix sauce up to 24 hours in advance for faster cooking.
- Extra saucy: Double the sauce if serving with lots of rice or noodles.
- Crisp texture: Do not overcrowd the pan so the chicken sears instead of steams.
- Heat level: Add more red pepper flakes or a teaspoon of chili paste for extra spice.
