Description

Crispy on the outside and tender in the middle, these broccoli fritters are packed with broccoli, Parmesan, and onion, then served with a creamy yogurt dill sauce for a fresh and savory finish.


Ingredients

  • 4 cups finely chopped broccoli florets, lightly steamed and cooled
  • 1/4 cup finely chopped onion
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 tablespoons olive oil, divided
  • 1/2 cup plain yogurt
  • 1 teaspoon lemon juice
  • 1/2 teaspoon dried dill

Instructions

  1. Heat a large nonstick skillet over medium heat. Make sure the broccoli is lightly steamed, cooled, and chopped very finely.
  2. In a large mixing bowl, stir together the chopped broccoli, onion, eggs, flour, Parmesan cheese, garlic powder, salt, and black pepper until a thick mixture forms.
  3. Add 1 tablespoon of olive oil to the skillet and coat the surface lightly.
  4. Scoop about 2 tablespoons of the mixture for each fritter into the skillet and gently flatten them with the back of a spoon or spatula.
  5. Cook the fritters for 3 to 4 minutes per side, adding the remaining olive oil as needed between batches, until both sides are golden brown and crisp.
  6. In a small bowl, stir together the plain yogurt, lemon juice, and dried dill until smooth. Let the fritters rest for 1 to 2 minutes after cooking.
  7. Serve the warm fritters with the yogurt dill sauce on the side.

Notes

  • Press excess moisture out of the broccoli after steaming so the fritters hold together better.
  • If the mixture feels too wet, add 1 tablespoon of extra flour at a time until it is easier to scoop.
  • Do not crowd the pan, or the fritters may steam instead of brown.
  • Reheat leftovers in a skillet or oven to bring back the crisp texture.
