Description

Brown Sugar & Cinnamon Streusel Pancakes are fluffy pancakes layered with a sweet, buttery streusel made of brown sugar and cinnamon. These indulgent breakfast treats taste like coffee cake in pancake form and are perfect for a cozy morning.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 tbsp granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 1/4 cups milk
  • 1 large egg
  • 3 tbsp unsalted butter, melted
  • 1 tsp vanilla extract
  • For the Streusel:
  • 1/3 cup brown sugar
  • 1 tsp ground cinnamon
  • 2 tbsp all-purpose flour
  • 2 tbsp unsalted butter, cold and cubed

Instructions

  1. In a bowl, mix flour, sugar, baking powder, and salt.
  2. In another bowl, whisk together milk, egg, melted butter, and vanilla. Add wet ingredients to dry and stir until just combined (batter will be slightly lumpy).
  3. To make the streusel, combine brown sugar, cinnamon, and flour in a small bowl. Cut in the cold butter using a fork until the mixture resembles coarse crumbs.
  4. Preheat a nonstick skillet or griddle over medium heat and lightly grease it.
  5. Pour 1/4 cup of batter for each pancake. Sprinkle about 1 tbsp of streusel on top of each one.
  6. Cook until bubbles form on the surface, about 2–3 minutes. Flip and cook the other side until golden brown and cooked through.
  7. Repeat with remaining batter and streusel. Serve warm with maple syrup, butter, or whipped cream.

Notes

  • Use a small spoon to evenly distribute streusel to avoid burning.
  • Make extra streusel to sprinkle on top when serving.
  • Add a dash of nutmeg for deeper flavor.
  • For fluffier pancakes, let the batter rest for 5 minutes before cooking.
