Brown Sugar & Cinnamon Streusel Pancakes are fluffy pancakes layered with a sweet, buttery streusel made of brown sugar and cinnamon. These indulgent breakfast treats taste like coffee cake in pancake form and are perfect for a cozy morning.

- 1 1/2 cups all-purpose flour
- 2 tbsp granulated sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1 1/4 cups milk
- 1 large egg
- 3 tbsp unsalted butter, melted
- 1 tsp vanilla extract
- For the Streusel:
- 1/3 cup brown sugar
- 1 tsp ground cinnamon
- 2 tbsp all-purpose flour
- 2 tbsp unsalted butter, cold and cubed
Instructions
- In a bowl, mix flour, sugar, baking powder, and salt.
- In another bowl, whisk together milk, egg, melted butter, and vanilla. Add wet ingredients to dry and stir until just combined (batter will be slightly lumpy).
- To make the streusel, combine brown sugar, cinnamon, and flour in a small bowl. Cut in the cold butter using a fork until the mixture resembles coarse crumbs.
- Preheat a nonstick skillet or griddle over medium heat and lightly grease it.
- Pour 1/4 cup of batter for each pancake. Sprinkle about 1 tbsp of streusel on top of each one.
- Cook until bubbles form on the surface, about 2–3 minutes. Flip and cook the other side until golden brown and cooked through.
- Repeat with remaining batter and streusel. Serve warm with maple syrup, butter, or whipped cream.
Notes
- Use a small spoon to evenly distribute streusel to avoid burning.
- Make extra streusel to sprinkle on top when serving.
- Add a dash of nutmeg for deeper flavor.
- For fluffier pancakes, let the batter rest for 5 minutes before cooking.
