These Brown Sugar Peach Crumb Bars are a sweet and buttery treat layered with juicy peaches and topped with a golden crumb topping. Perfect for summer gatherings or an easy dessert any time of year.

- 1 cup unsalted butter, melted
- 1 cup brown sugar, packed
- ½ cup granulated sugar
- 1 tsp vanilla extract
- 3 cups all-purpose flour
- ½ tsp baking soda
- ½ tsp salt
- 3 cups fresh peaches, peeled and diced (or drained canned peaches)
- 2 tbsp cornstarch
- 2 tbsp lemon juice
- ¼ cup brown sugar (for peach layer)
- ½ tsp ground cinnamon
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish or line with parchment paper.
- In a large bowl, mix melted butter, brown sugar, granulated sugar, and vanilla extract until combined.
- Add flour, baking soda, and salt. Mix until a crumbly dough forms.
- Press two-thirds of the dough into the prepared pan to form the crust. Bake for 10 minutes.
- In a separate bowl, toss the diced peaches with cornstarch, lemon juice, brown sugar, and cinnamon.
- Spread the peach mixture evenly over the baked crust.
- Crumble the remaining dough on top of the peach layer.
- Bake for 30–35 minutes or until the top is golden and the peaches are bubbly.
- Allow to cool completely before cutting into bars.
Notes
- Use ripe, fresh peaches for best flavor, but canned or frozen (thawed) peaches work too.
- Chill the bars before slicing for cleaner cuts.
- Serve with a scoop of vanilla ice cream for extra indulgence.
- Store leftovers in an airtight container for up to 3 days.
