- 4 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 2 cups cherry tomatoes, halved
- 1/4 cup fresh basil, chopped
- 1 cup shredded mozzarella cheese
- Salt and pepper to taste
- 1 tbsp balsamic vinegar (optional)
Instructions
- Preheat oven to 400°F (200°C).
- Heat olive oil in a skillet over medium-high heat. Season chicken with salt and pepper and sear each side until golden, about 3 minutes per side.
- In a bowl, combine cherry tomatoes, garlic, basil, and balsamic vinegar if using.
- Place seared chicken in a baking dish. Spoon tomato mixture evenly over each breast.
- Top each chicken breast with shredded mozzarella.
- Bake in the oven for 15-20 minutes until chicken is cooked through and cheese is melted and bubbly.
- Serve hot, garnished with extra basil if desired.
