Description

A flavorful and juicy bruschetta chicken topped with fresh tomatoes, basil, and mozzarella, baked to perfection for a delicious Italian-inspired meal.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 2 cups cherry tomatoes, halved
  • 1/4 cup fresh basil, chopped
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste
  • 1 tbsp balsamic vinegar (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Heat olive oil in a skillet over medium-high heat. Season chicken with salt and pepper and sear each side until golden, about 3 minutes per side.
  3. In a bowl, combine cherry tomatoes, garlic, basil, and balsamic vinegar if using.
  4. Place seared chicken in a baking dish. Spoon tomato mixture evenly over each breast.
  5. Top each chicken breast with shredded mozzarella.
  6. Bake in the oven for 15-20 minutes until chicken is cooked through and cheese is melted and bubbly.
  7. Serve hot, garnished with extra basil if desired.
