- 2 cups shredded cooked chicken
- 3 sub rolls
- 1 ½ cups shredded mozzarella cheese
- ½ cup buffalo sauce
- ¼ cup ranch dressing
- ½ red onion, thinly sliced
- 1 bell pepper, thinly sliced
- 2 tablespoons chopped chives
Instructions
- Preheat the oven to 375°F (190°C).
- In a mixing bowl, toss the shredded chicken with buffalo sauce until evenly coated.
- Lightly grease a baking dish.
- Sauté the red onion and bell pepper in a small skillet over medium heat until softened.
- Slice open the sub rolls and fill each with buffalo chicken, sautéed veggies, and mozzarella cheese.
- Place the subs in the baking dish and bake for 12–15 minutes, or until the cheese is melted and bubbly.
- Remove from oven and drizzle ranch dressing over the top.
- Sprinkle chopped chives as a finishing touch.
