Description
A crispy, golden flatbread sandwich packed with creamy burrata, roasted cherry tomatoes, fresh basil, and a sweet balsamic glaze. It’s the ultimate fusion of a caprese salad and pizza, all in a warm, handheld delight.
Ingredients
- Flatbread or Naan: 2 pieces
- Burrata Cheese: 1 ball (about 4 oz)
- Cherry Tomatoes: 1 cup, halved
- Fresh Basil Leaves: A handful
- Olive Oil: 1 tablespoon
- Balsamic Glaze: 1 tablespoon
- Garlic Powder: ½ teaspoon
- Salt and Black Pepper: To taste
Instructions
- Set a skillet or nonstick pan over medium heat to warm while you prep the ingredients.
- Toss cherry tomatoes in a bowl with olive oil, garlic powder, salt, and pepper.
- Add the tomatoes to the hot skillet and roast for 5 to 7 minutes until softened and slightly blistered. Remove and set aside.
- Toast each piece of flatbread lightly in the skillet. On one piece, layer roasted tomatoes, torn burrata, and fresh basil leaves.
- Top with the second flatbread. Press gently and let cook for 2 to 3 minutes per side until golden and crisp, cheese warmed through.
- Remove from heat and drizzle with balsamic glaze. Slice into halves or quarters.
- Plate warm and serve immediately with extra basil or a side salad if you like.
Notes
- Use pre-made flatbread or naan to save time.
- Roast the tomatoes in advance and store them in the fridge.
- Warm burrata slightly before assembling to help it spread easily.
- Don’t overfill the sandwich to keep it easy to eat and flip.
