Ingredients
Scale
- 12 oz bowtie pasta
- 14 oz smoked sausage, sliced
- 1 cup cherry tomatoes
- 3 cloves garlic, minced
- 1 medium onion, diced
- 2 tablespoons olive oil
- 1 cup heavy cream
- 2 teaspoons Cajun seasoning
- 1 cup shredded cheddar cheese
- 2 tablespoons fresh parsley, chopped
- Salt and black pepper, to taste
Instructions
- Warm a large pot over medium heat and add olive oil.
- Sauté the sliced sausage until browned, then remove and set aside.
- In the same pot, cook diced onion and garlic until fragrant. Add cherry tomatoes and let soften.
- Return the sausage to the pot, add pasta, and pour in just enough water to cover the noodles. Bring to a boil.
- Reduce heat, stir in Cajun seasoning, and simmer until pasta is nearly cooked and most of the liquid is absorbed.
- Pour in heavy cream and shredded cheese. Stir until melted and creamy.
- Season with salt and pepper, stir in fresh parsley, and let rest for a few minutes.
- Serve hot, garnished with extra cheese or parsley if desired.
Notes
- Use freshly grated cheese for the best melt and flavor.
- Add a splash of pasta water if the sauce gets too thick.
- Try adding bell peppers or spinach for extra veggies.
