These Cajun Shrimp-Stuffed Mushrooms are bursting with bold flavor and gooey cheese. Perfect as a party appetizer or indulgent snack, each bite delivers a satisfying Cajun kick and a cheesy pull.

- 20 large white or cremini mushrooms, stems removed and cleaned
- 1 tablespoon olive oil
- 1/2 pound (225g) raw shrimp, peeled, deveined, and finely chopped
- 2 cloves garlic, minced
- 1/4 cup green onions, finely chopped
- 1/2 teaspoon Cajun seasoning (more to taste)
- 1/4 teaspoon smoked paprika
- Salt and pepper, to taste
- 4 oz (115g) cream cheese, softened
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Brush mushroom caps with olive oil and place them cavity-side up on the baking sheet.
- In a skillet over medium heat, sauté shrimp, garlic, and green onions for 3–4 minutes until shrimp is opaque and fragrant. Season with Cajun seasoning, paprika, salt, and pepper. Remove from heat and let cool slightly.
- In a bowl, mix cream cheese, half the mozzarella, Parmesan, and the cooked shrimp mixture until well combined.
- Stuff each mushroom cap generously with the filling.
- Top each mushroom with the remaining mozzarella cheese.
- Bake for 18–20 minutes or until mushrooms are tender and cheese is golden and bubbly.
- Broil for an additional 1–2 minutes if you want extra browning on top.
- Garnish with chopped parsley and serve immediately for maximum cheese pull.
Notes
- Use a block of mozzarella and shred it fresh for best cheese pull results.
- Adjust Cajun seasoning to taste—some blends can be quite spicy.
- Make the filling a day ahead and refrigerate for quicker prep.
- Cremini mushrooms hold their shape better during baking.
