- 4 boneless chicken thighs (skin-on preferred)
- 2 tbsp soy sauce
- 1 tbsp dark soy sauce
- 2 tbsp brown sugar
- 1 tbsp rice vinegar
- 1 tbsp vegetable oil
- 4 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 2 cups chicken broth
- 1 cup jasmine rice
- 2 green onions, sliced (for garnish)
- Sesame seeds (optional, for garnish)
- Salt and pepper to taste
Instructions
- Rinse the rice until water runs clear. Cook according to package instructions and set aside.
- In a bowl, mix soy sauce, dark soy sauce, brown sugar, and rice vinegar. Set aside.
- Heat oil in a pan over medium-high heat. Season chicken with salt and pepper.
- Sear chicken thighs skin-side down until browned and crispy, about 4–5 minutes per side. Remove and set aside.
- In the same pan, sauté garlic and ginger until fragrant, about 1 minute.
- Pour in the soy mixture and bring to a simmer. Add chicken broth and stir well.
- Return chicken to the pan and simmer uncovered for 15–20 minutes, basting occasionally, until the sauce reduces and the chicken is glazed and cooked through.
- Serve chicken over steamed rice, spoon broth around the rice, and garnish with green onions and sesame seeds.
Notes
- Use bone-in chicken thighs for even more flavor if preferred.
- Add bok choy or spinach to the broth for extra greens.
- Adjust sugar to taste for a more or less caramelized finish.
