Description

Caramelised Soy Chicken in Garlic Ginger Broth with Rice is a comforting and flavorful dish featuring tender chicken thighs cooked in a sweet-savory soy glaze, served in a rich garlic and ginger broth over fluffy rice.


Ingredients

  • 4 boneless chicken thighs (skin-on preferred)
  • 2 tbsp soy sauce
  • 1 tbsp dark soy sauce
  • 2 tbsp brown sugar
  • 1 tbsp rice vinegar
  • 1 tbsp vegetable oil
  • 4 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 2 cups chicken broth
  • 1 cup jasmine rice
  • 2 green onions, sliced (for garnish)
  • Sesame seeds (optional, for garnish)
  • Salt and pepper to taste

Instructions

  1. Rinse the rice until water runs clear. Cook according to package instructions and set aside.
  2. In a bowl, mix soy sauce, dark soy sauce, brown sugar, and rice vinegar. Set aside.
  3. Heat oil in a pan over medium-high heat. Season chicken with salt and pepper.
  4. Sear chicken thighs skin-side down until browned and crispy, about 4–5 minutes per side. Remove and set aside.
  5. In the same pan, sauté garlic and ginger until fragrant, about 1 minute.
  6. Pour in the soy mixture and bring to a simmer. Add chicken broth and stir well.
  7. Return chicken to the pan and simmer uncovered for 15–20 minutes, basting occasionally, until the sauce reduces and the chicken is glazed and cooked through.
  8. Serve chicken over steamed rice, spoon broth around the rice, and garnish with green onions and sesame seeds.

Notes

  • Use bone-in chicken thighs for even more flavor if preferred.
  • Add bok choy or spinach to the broth for extra greens.
  • Adjust sugar to taste for a more or less caramelized finish.
