Description

Cauliflower Cheese Toasts are a comforting and flavorful snack or light meal, featuring roasted cauliflower and creamy cheese atop crispy sourdough bread. Inspired by Ina Garten’s style, this recipe blends rich flavors with simple, wholesome ingredients.


Ingredients

  • 1 medium head cauliflower, cut into small florets
  • 3 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 4 slices sourdough bread
  • 1/2 cup grated Gruyère cheese
  • 1/2 cup grated white cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1 tablespoon chopped fresh parsley (optional, for garnish)

Instructions

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Toss the cauliflower florets with olive oil, salt, black pepper, and red pepper flakes (if using). Spread on the baking sheet and roast for 25–30 minutes, until golden and tender.
  3. While the cauliflower roasts, mix the cheeses, mayonnaise, Dijon mustard, and garlic powder in a large bowl.
  4. Remove the cauliflower from the oven and let cool slightly. Roughly chop into smaller pieces, then mix into the cheese mixture.
  5. Toast the sourdough slices lightly. Place them on a baking sheet.
  6. Spoon the cauliflower cheese mixture evenly over the bread slices.
  7. Return to the oven and bake at 425°F (220°C) for 10–12 minutes, or until the cheese is bubbly and golden.
  8. Garnish with chopped parsley if desired and serve warm.

Notes

  • You can use a mix of your favorite cheeses if you don’t have Gruyère or cheddar.
  • For extra flavor, add caramelized onions or a sprinkle of smoked paprika to the cheese mixture.
  • This recipe works great as an appetizer or a vegetarian main with a side salad.
