- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 ½ cups buttermilk
- 2 large eggs
- 4 tablespoons unsalted butter, melted
- 1 cup shredded cheddar cheese
- 2 fresh jalapeños, finely chopped
- Honey (optional, for serving)
Instructions
- Preheat your waffle iron and lightly grease it.
- In a bowl, mix flour, cornmeal, baking powder, and salt.
- In another bowl, whisk together buttermilk, eggs, and melted butter.
- Combine wet and dry ingredients until just mixed. Fold in cheddar and jalapeños.
- Pour batter into the waffle iron and cook for 4–6 minutes or until golden and crisp.
- Remove carefully and repeat with remaining batter.
- Serve hot with optional honey or toppings of choice.
