- 1 prepared pie crust
- 2 cups sweet corn (fresh or frozen)
- 1 cup shredded cheddar cheese
- 1/2 cup diced onion
- 3 large eggs
- 1 cup heavy cream
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
Instructions
- Preheat oven to 350°F (175°C).
- Roll out pie crust and press into a 9-inch pie dish.
- Sprinkle diced onion, sweet corn, and cheddar evenly over bottom of pie crust.
- In a medium bowl, whisk together eggs, heavy cream, paprika, salt, and pepper.
- Pour mixture over corn and cheddar in pie crust.
- Bake for 40-45 minutes until center is set and top is lightly browned.
- Remove from oven and let cool for 10 minutes before serving.
Notes
- Add diced chili peppers for a bit of a kick.
- Pair with a green salad for a complete meal.
- Frozen or canned sweet corn can be used if fresh is unavailable.
