Description

A savory pie filled with sweet corn, cheddar cheese, and a creamy base — perfect as a side or a main course!


Ingredients

  • 1 prepared pie crust
  • 2 cups sweet corn (fresh or frozen)
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced onion
  • 3 large eggs
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Roll out pie crust and press into a 9-inch pie dish.
  3. Sprinkle diced onion, sweet corn, and cheddar evenly over bottom of pie crust.
  4. In a medium bowl, whisk together eggs, heavy cream, paprika, salt, and pepper.
  5. Pour mixture over corn and cheddar in pie crust.
  6. Bake for 40-45 minutes until center is set and top is lightly browned.
  7. Remove from oven and let cool for 10 minutes before serving.

Notes

  • Add diced chili peppers for a bit of a kick.
  • Pair with a green salad for a complete meal.
  • Frozen or canned sweet corn can be used if fresh is unavailable.
