Description
A creamy, hearty soup that tastes like a classic cheeseburger, loaded with savory ground beef, tender potatoes, melted cheddar, and a rich, comforting broth.
Ingredients
- Ground Beef: 1 pound
- Potatoes: 3 medium potatoes, peeled and diced
- Cheddar Cheese: 2 cups shredded cheddar cheese
- Onion: 1 medium onion, finely chopped
- Carrot: 1 medium carrot, diced
- Butter: 2 tablespoons
- All Purpose Flour: 2 tablespoons
- Chicken Broth: 4 cups
- Whole Milk: 2 cups
- Salt: 1 teaspoon
- Black Pepper: 1/2 teaspoon
Instructions
- Place a large soup pot on medium heat.
- Add the ground beef and chopped onion, cook until the beef is browned and the onion is soft.
- Stir in the butter until melted.
- Sprinkle in the flour and stir for 1 minute to cook off the raw flour taste.
- Slowly pour in the chicken broth while stirring until smooth.
- Add the diced potatoes and diced carrot, bring to a gentle simmer.
- Simmer until the potatoes and carrot are tender, about 15 to 20 minutes.
- Stir in the whole milk and warm gently, do not boil.
- Add the shredded cheddar cheese a handful at a time, stirring until fully melted and creamy.
- Season with salt and black pepper, then serve hot.
Notes
- For the smoothest melt, add the cheddar gradually and keep the heat at a gentle simmer.
- If the soup thickens too much after chilling, reheat slowly and add a splash of broth or milk.
- Cut the potatoes into even pieces so they cook at the same rate.
- Let the soup rest for 5 minutes before serving so the texture settles nicely.
