Description

A creamy, hearty soup that tastes like a classic cheeseburger, loaded with savory ground beef, tender potatoes, melted cheddar, and a rich, comforting broth.


Ingredients

  • Ground Beef: 1 pound
  • Potatoes: 3 medium potatoes, peeled and diced
  • Cheddar Cheese: 2 cups shredded cheddar cheese
  • Onion: 1 medium onion, finely chopped
  • Carrot: 1 medium carrot, diced
  • Butter: 2 tablespoons
  • All Purpose Flour: 2 tablespoons
  • Chicken Broth: 4 cups
  • Whole Milk: 2 cups
  • Salt: 1 teaspoon
  • Black Pepper: 1/2 teaspoon

Instructions

  1. Place a large soup pot on medium heat.
  2. Add the ground beef and chopped onion, cook until the beef is browned and the onion is soft.
  3. Stir in the butter until melted.
  4. Sprinkle in the flour and stir for 1 minute to cook off the raw flour taste.
  5. Slowly pour in the chicken broth while stirring until smooth.
  6. Add the diced potatoes and diced carrot, bring to a gentle simmer.
  7. Simmer until the potatoes and carrot are tender, about 15 to 20 minutes.
  8. Stir in the whole milk and warm gently, do not boil.
  9. Add the shredded cheddar cheese a handful at a time, stirring until fully melted and creamy.
  10. Season with salt and black pepper, then serve hot.

Notes

  • For the smoothest melt, add the cheddar gradually and keep the heat at a gentle simmer.
  • If the soup thickens too much after chilling, reheat slowly and add a splash of broth or milk.
