- 4 large apples (Honeycrisp or Granny Smith work well)
- 8 oz cream cheese, softened
- 1/4 cup granulated sugar
- 1 tsp vanilla extract
- 1/4 cup chopped pecans or walnuts (optional)
- 1/2 tsp ground cinnamon
- 2 tbsp brown sugar
- 1 tbsp melted butter
- 1/4 cup raisins or dried cranberries (optional)
Instructions
- Preheat oven to 350°F (175°C).
- Core each apple carefully, leaving the bottom intact to create a cavity for filling.
- In a bowl, beat cream cheese, granulated sugar, and vanilla extract until smooth and creamy.
- Stir in nuts and dried fruit if using.
- Fill each apple cavity with the cheesecake mixture.
- Place apples in a baking dish and sprinkle with cinnamon and brown sugar.
- Drizzle melted butter over the apples.
- Bake for 25–30 minutes until apples are tender but still hold shape.
- Let cool slightly before serving. Optionally, drizzle with caramel sauce or sprinkle extra nuts on top.
Notes
- Use firm apples to prevent them from getting too mushy during baking.
- For a richer flavor, add a pinch of nutmeg or allspice to the filling.
- Serve warm with a scoop of vanilla ice cream for extra indulgence.
