- 3 large yellow onions, thinly sliced
- 2 tablespoons butter
- 3 garlic cloves, minced
- 2 cups beef broth
- 1 cup heavy cream
- 1 cup shredded mozzarella cheese
- 1/2 cup grated parmesan cheese
- 1 teaspoon fresh thyme, finely chopped
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat oven to 190°C.
- Melt butter in a large skillet over medium low heat and cook sliced onions until deeply caramelized.
- Add minced garlic and cook briefly until fragrant.
- Stir in orzo, beef broth, and heavy cream, mixing well.
- Transfer mixture into a greased baking dish.
- Bake for 25 minutes until orzo is tender and most liquid is absorbed.
- Top with mozzarella and parmesan cheese.
- Return to oven and bake until cheese is melted and golden.
- Let rest for a few minutes before serving.
