A juicy and flavorful chicken breast stuffed with sautéed garlic mushrooms and melty cheese, finished with a golden garlic butter sear — an elegant and satisfying main dish.

- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 2 tablespoons unsalted butter
- 3 cloves garlic, minced
- 1 1/2 cups mushrooms, finely chopped
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried parsley
- Salt and pepper to taste
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- Toothpicks or kitchen twine (for securing)
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet, heat olive oil and 1 tablespoon butter over medium heat. Add garlic and mushrooms. Cook for 5–7 minutes until mushrooms are soft and moisture has evaporated. Season with thyme, parsley, salt, and pepper.
- Stir in both cheeses and remove from heat. Let cool slightly.
- Carefully cut a pocket into the side of each chicken breast without slicing all the way through.
- Stuff the mushroom-cheese mixture into each chicken breast and secure with toothpicks or twine.
- Season the outside of the chicken with salt and pepper.
- Heat remaining tablespoon of butter in an oven-safe skillet over medium-high heat. Sear chicken for 3–4 minutes on each side until golden.
- Transfer skillet to the oven and bake for 15–20 minutes or until chicken is fully cooked through (internal temp 165°F/74°C).
- Let rest for 5 minutes before serving. Spoon any pan juices over the top.
Notes
- You can add spinach or sun-dried tomatoes to the filling for extra flavor and color.
- Use a meat thermometer to avoid overcooking the chicken.
- Pairs wonderfully with roasted veggies or a light salad.
