Ingredients
Scale
- 2 large fresh cucumbers, sliced thick into coins
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 1/2 cup shredded cheddar cheese
- 2 tablespoons fresh dill, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- In a large mixing bowl, combine sour cream, mayonnaise, shredded cheddar cheese, minced garlic, chopped dill, lemon juice, salt, and pepper. Stir until smooth.
- Slice cucumbers into thick coins. For extra crunch, lightly salt and pat dry them before adding to the bowl.
- Add cucumber slices to the dressing. Stir gently to coat every piece.
- Let the mixture chill in the fridge for 15 to 30 minutes to allow flavors to meld.
- Before serving, give it one last stir and adjust salt or lemon juice to taste. Garnish with extra dill if desired.
Notes
- Salt and pat cucumbers dry to prevent watery dressing.
- Fresh dill gives the best flavor—avoid dried if possible.
- Make ahead for even better flavor after chilling.
- Use freshly shredded cheese for smooth blending.
