Description
Cheesymite Scrolls are a savory baked snack made with soft dough, spread with Vegemite and cheese, then rolled and sliced into scrolls perfect for lunchboxes or snacks.
Ingredients

- 2 cups self-raising flour
- 1/2 tsp salt
- 3/4 cup milk
- 2 tbsp butter, melted
- 2 tbsp Vegemite
- 1 1/2 cups grated cheddar cheese
Instructions
- Preheat oven to 200°C (390°F) and line a baking tray with parchment paper.
- In a bowl, mix flour and salt. Add milk and butter, and stir to form a soft dough.
- Knead briefly on a floured surface until smooth, then roll out into a rectangle.
- Spread Vegemite evenly over the dough.
- Sprinkle grated cheese over the Vegemite.
- Roll the dough up tightly from the long edge to form a log.
- Slice into 2–3 cm thick scrolls and place cut side up on the tray.
- Bake for 15–20 minutes or until golden and cooked through.
Notes
- Adjust Vegemite amount to taste if you prefer a milder flavor.
- Best enjoyed warm, but also great cold in lunchboxes.
- You can add a little mozzarella for extra cheesiness.
