Description

Cheesymite Scrolls are a savory baked snack made with soft dough, spread with Vegemite and cheese, then rolled and sliced into scrolls perfect for lunchboxes or snacks.


Ingredients

Scale
  • 2 cups self-raising flour
  • 1/2 tsp salt
  • 3/4 cup milk
  • 2 tbsp butter, melted
  • 2 tbsp Vegemite
  • 1 1/2 cups grated cheddar cheese

Instructions

  1. Preheat oven to 200°C (390°F) and line a baking tray with parchment paper.
  2. In a bowl, mix flour and salt. Add milk and butter, and stir to form a soft dough.
  3. Knead briefly on a floured surface until smooth, then roll out into a rectangle.
  4. Spread Vegemite evenly over the dough.
  5. Sprinkle grated cheese over the Vegemite.
  6. Roll the dough up tightly from the long edge to form a log.
  7. Slice into 2–3 cm thick scrolls and place cut side up on the tray.
  8. Bake for 15–20 minutes or until golden and cooked through.

Notes

  • Adjust Vegemite amount to taste if you prefer a milder flavor.
  • Best enjoyed warm, but also great cold in lunchboxes.
  • You can add a little mozzarella for extra cheesiness.
