Cherry Mash Truffles are a delightful no-bake treat inspired by the classic candy, combining a sweet cherry-flavored center with a rich chocolate and peanut coating.

- 1 jar (10 oz) maraschino cherries, drained and chopped
- 1/2 cup (1 stick) unsalted butter, softened
- 3 1/2 cups powdered sugar
- 1/2 tsp almond extract
- 1/2 tsp vanilla extract
- 1/4 tsp salt
- 2 cups semi-sweet chocolate chips
- 1 cup creamy peanut butter
- 1 1/2 cups crushed salted peanuts
Instructions
- In a mixing bowl, combine chopped maraschino cherries, softened butter, almond and vanilla extracts, and salt.
- Gradually add powdered sugar, mixing until a thick dough forms.
- Roll the mixture into 1-inch balls and place them on a parchment-lined baking sheet. Freeze for 30 minutes or until firm.
- In a microwave-safe bowl, melt chocolate chips and peanut butter together in 30-second intervals, stirring until smooth.
- Stir in crushed peanuts until fully combined.
- Dip each cherry ball into the chocolate-peanut coating, using a fork to ensure it’s fully covered.
- Place coated truffles back on the parchment-lined tray and refrigerate until set, about 30 minutes.
Notes
- Make sure cherries are well-drained to avoid excess moisture in the filling.
- You can use white chocolate or dark chocolate for a different flavor twist.
- Store truffles in an airtight container in the refrigerator for up to a week.
