- 8 oz (225g) pasta (fettuccine, penne, or your choice)
- 2 tbsp olive oil
- 2 boneless, skinless chicken breasts, sliced
- 8 oz (225g) mushrooms, sliced
- 3 cloves garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp dried thyme or Italian seasoning
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 2 tbsp chopped fresh parsley (optional, for garnish)
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add sliced chicken, season with salt, pepper, and thyme, and cook until golden and cooked through. Remove and set aside.
- In the same skillet, add mushrooms and sauté until browned and tender, about 5 minutes.
- Add garlic and cook for another minute until fragrant.
- Return the chicken to the skillet. Stir in the cream and chicken broth. Bring to a gentle simmer.
- Add Parmesan cheese and stir until melted and sauce thickens slightly, about 2–3 minutes.
- Add the cooked pasta and toss to combine with the sauce and chicken.
- Garnish with chopped parsley if desired, and serve warm.
Notes
- You can substitute heavy cream with half-and-half or a mix of milk and cream for a lighter version.
- Add spinach or peas for extra vegetables.
- Use rotisserie chicken for a quick shortcut.
