Description

Chicken and Mushroom Pasta in Creamy Sauce is a comforting and flavorful dish made with tender chicken breast, earthy mushrooms, and a rich, garlicky cream sauce tossed with your favorite pasta.


Ingredients

  • 8 oz (225g) pasta (fettuccine, penne, or your choice)
  • 2 tbsp olive oil
  • 2 boneless, skinless chicken breasts, sliced
  • 8 oz (225g) mushrooms, sliced
  • 3 cloves garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried thyme or Italian seasoning
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp chopped fresh parsley (optional, for garnish)

Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add sliced chicken, season with salt, pepper, and thyme, and cook until golden and cooked through. Remove and set aside.
  3. In the same skillet, add mushrooms and sauté until browned and tender, about 5 minutes.
  4. Add garlic and cook for another minute until fragrant.
  5. Return the chicken to the skillet. Stir in the cream and chicken broth. Bring to a gentle simmer.
  6. Add Parmesan cheese and stir until melted and sauce thickens slightly, about 2–3 minutes.
  7. Add the cooked pasta and toss to combine with the sauce and chicken.
  8. Garnish with chopped parsley if desired, and serve warm.

Notes

  • You can substitute heavy cream with half-and-half or a mix of milk and cream for a lighter version.
  • Add spinach or peas for extra vegetables.
  • Use rotisserie chicken for a quick shortcut.
