- 2 cups cooked chicken breast, shredded or chopped
- 1 cup bell peppers (red, yellow, green), sliced
- 1/2 cup red onion, sliced
- 1 cup shredded cheddar or Monterey Jack cheese
- 1/3 cup ranch dressing
- 1 tbsp olive oil
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 4 large flour tortillas
Instructions
- Heat olive oil in a skillet over medium heat. Add sliced bell peppers and onion. Sauté for 5–7 minutes until tender.
- Add cooked chicken, garlic powder, salt, and pepper. Stir until heated through, about 2–3 minutes.
- Remove from heat and mix in ranch dressing until evenly coated.
- Warm tortillas slightly to make them pliable. Lay them flat and divide the chicken-pepper mixture evenly among them.
- Top each with shredded cheese. Roll up burritos, folding in the sides and rolling tightly.
- Optional: Toast burritos in a dry skillet or on a panini press for a golden, crispy finish.
- Serve hot with extra ranch or salsa if desired.
