Description

Hearty and flavorful burritos filled with tender chicken, colorful bell peppers, melty cheese, and creamy ranch dressing — a quick and satisfying meal perfect for any day.


Ingredients

  • 2 cups cooked chicken breast, shredded or chopped
  • 1 cup bell peppers (red, yellow, green), sliced
  • 1/2 cup red onion, sliced
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1/3 cup ranch dressing
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 4 large flour tortillas

Instructions

  1. Heat olive oil in a skillet over medium heat. Add sliced bell peppers and onion. Sauté for 5–7 minutes until tender.
  2. Add cooked chicken, garlic powder, salt, and pepper. Stir until heated through, about 2–3 minutes.
  3. Remove from heat and mix in ranch dressing until evenly coated.
  4. Warm tortillas slightly to make them pliable. Lay them flat and divide the chicken-pepper mixture evenly among them.
  5. Top each with shredded cheese. Roll up burritos, folding in the sides and rolling tightly.
  6. Optional: Toast burritos in a dry skillet or on a panini press for a golden, crispy finish.
  7. Serve hot with extra ranch or salsa if desired.
