- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 small onion, sliced
- 2 tbsp olive oil
- 1 cup shredded cheddar or Monterey Jack cheese
- 1/2 cup ranch dressing
- 4 large flour tortillas
- Salt and pepper to taste
- Optional: chopped cilantro, sour cream, jalapeños
Instructions
- Heat olive oil in a skillet over medium heat. Add sliced bell peppers and onion; sauté until tender, about 5–7 minutes.
- Add shredded chicken to the skillet and season with salt and pepper. Stir to combine and heat through.
- Warm the tortillas in a dry pan or microwave for easier rolling.
- Lay each tortilla flat and spread about 2 tbsp ranch dressing in the center.
- Divide the chicken and pepper mixture evenly among the tortillas.
- Sprinkle cheese over the filling.
- Optional: add chopped cilantro, sour cream, or jalapeños as desired.
- Roll up the tortillas tightly, folding in the sides to enclose the filling.
- Optional: heat the burritos in a pan or oven for a crispy finish and melted cheese.
