Description
Creamy and comforting chicken Boursin cheese pasta made with tender chicken breast, rich garlic and herb Boursin cheese, and perfectly cooked pasta. A quick and flavorful weeknight dinner.

- 2 chicken breasts, diced
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 shallot, finely chopped
- 1 pack (150g) Boursin Garlic & Fine Herbs cheese
- 1/2 cup milk or cream
- 8 oz (225g) pasta of choice (penne, fettuccine, etc.)
- Salt and pepper to taste
- Fresh parsley or basil for garnish (optional)
- Grated Parmesan cheese for topping (optional)
Instructions
- Cook pasta according to package instructions. Reserve 1/2 cup pasta water, then drain and set aside.
- Heat olive oil in a skillet over medium heat. Add diced chicken, season with salt and pepper, and cook until golden and cooked through. Remove and set aside.
- In the same pan, sauté garlic and shallot until fragrant, about 2 minutes.
- Lower heat and add Boursin cheese and milk (or cream). Stir until cheese melts into a smooth sauce.
- Return the cooked chicken to the pan and mix well.
- Add cooked pasta and toss to coat in the sauce. Add reserved pasta water a bit at a time if needed to loosen the sauce.
- Serve warm, garnished with fresh herbs and Parmesan if desired.
Notes
- Use rotisserie chicken for a faster version.
- Add spinach or peas for extra veggies and color.
- Substitute milk with cream for a richer sauce.
