- 2 flatbreads or 4 bagels, halved
- 300g cooked chicken breast, sliced
- 150g chorizo, sliced
- 200g halloumi cheese, sliced
- 2 tablespoons olive oil
- 2 tablespoons hot honey (or honey mixed with chili flakes)
- 1 small red onion, thinly sliced
- Fresh parsley or cilantro, chopped, for garnish
- Salt and black pepper to taste
Instructions
- Preheat oven to 200°C (400°F).
- Heat 1 tablespoon olive oil in a skillet over medium heat and cook chorizo slices until slightly crisp, about 3–4 minutes. Remove and set aside.
- In the same skillet, add halloumi slices and cook until golden brown on both sides, about 2 minutes per side. Remove and set aside.
- Lightly brush flatbreads or bagel halves with remaining olive oil.
- Arrange cooked chicken slices, chorizo, and halloumi evenly over flatbreads or bagels.
- Add sliced red onions on top.
- Bake in the oven for 8–10 minutes until heated through and flatbreads are slightly crisp.
- Remove from oven, drizzle with hot honey, and garnish with fresh parsley or cilantro.
- Serve immediately while warm.
Notes
- Adjust hot honey quantity based on your preferred spice level.
- Use naan or pita bread as alternative bases.
- For extra crunch, add toasted pine nuts or walnuts.
- Leftovers can be stored in the fridge for up to 2 days and reheated in the oven.
