Description

A creamy, crisp, and refreshing chicken fruit salad made with cooked chicken, grapes, apple, celery, toasted almonds, and a light tangy dressing. Perfect for lunch, meal prep, sandwiches, or serving in lettuce cups.


Ingredients

  • 3 cups cooked chicken, chopped
  • 1 cup red seedless grapes, halved
  • 1 cup green seedless grapes, halved
  • 1 medium apple, diced
  • 2 stalks celery, diced
  • 1/2 cup sliced almonds, toasted
  • 1/2 cup mayonnaise
  • 1/4 cup plain Greek yogurt
  • 1 tablespoon lemon juice
  • 1 teaspoon honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Place a large serving bowl in the fridge for a few minutes if you want the salad extra cold and crisp.
  2. In a small bowl, stir together the mayonnaise, plain Greek yogurt, lemon juice, honey, salt, and black pepper until smooth and creamy.
  3. Set out a large mixing bowl and prepare the cooked chicken, red seedless grapes, green seedless grapes, apple, celery, toasted sliced almonds, and parsley.
  4. Add the cooked chicken, red seedless grapes, green seedless grapes, diced apple, diced celery, toasted sliced almonds, and chopped parsley to the large bowl. Pour the dressing over the top.
  5. Gently fold everything together until evenly coated, being careful not to crush the fruit.
  6. Taste and adjust with a little extra salt or lemon juice if needed. Chill for 20 minutes before serving for the best flavor.
  7. Serve cold in lettuce cups, on croissants, on sandwich bread, or straight from the bowl.

Notes

  • Use fully chilled cooked chicken for the best texture.
  • Add the almonds just before serving if you want them extra crisp.
  • Toss the diced apple with a little lemon juice if making ahead.
  • Store in an airtight container in the refrigerator for up to 3 days.
