Description

A bright and buttery chicken piccata with tender golden cutlets simmered in a lemon caper sauce that is fresh, rich, and full of flavor.


Ingredients

  • 4 chicken cutlets
  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 3 garlic cloves
  • 1 cup chicken broth
  • 1/3 cup fresh lemon juice
  • 1 lemon, thinly sliced
  • 3 tablespoons capers
  • 2 tablespoons fresh parsley

Instructions

  1. Heat a large skillet over medium heat.
  2. In a shallow dish, mix flour, salt, and pepper. Coat each chicken cutlet lightly.
  3. Add olive oil to the skillet and heat until shimmering.
  4. Cook chicken for 3 to 4 minutes per side until golden. Remove and set aside.
  5. In the same pan, melt butter, add garlic, then pour in chicken broth and lemon juice. Let simmer.
  6. Add capers and return chicken to the pan. Cook until sauce thickens slightly.
  7. Add lemon slices and sprinkle parsley before serving.
