Description

Golden, crispy tortillas filled with seasoned chicken, sautéed onion and bell pepper, and a melty blend of cheddar and Monterey Jack cheese. This easy stovetop favorite is quick enough for busy nights and satisfying enough to feel special.


Ingredients

  • 2 cups shredded cooked chicken
  • 1 tablespoon olive oil
  • 1 small onion, finely diced
  • 1 medium bell pepper, finely diced
  • 2 teaspoons taco seasoning
  • 1/4 cup salsa
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 4 large flour tortillas
  • 1 tablespoon butter or oil for the skillet
  • Sour cream, for serving
  • Extra salsa, for serving
  • 2 tablespoons chopped cilantro, optional for serving

Instructions

  1. Heat a large skillet over medium heat.
  2. Add olive oil, onion, and bell pepper. Cook for 3 to 4 minutes until softened.
  3. Stir in the shredded chicken, taco seasoning, and salsa. Cook for 2 minutes until warmed through and well coated.
  4. Lightly grease the skillet with butter or oil.
  5. Lay one tortilla flat and add one-quarter of the cheddar and Monterey Jack cheese to one half. Spoon some of the chicken mixture over the cheese, then top with a little more cheese.
  6. Fold the tortilla over into a half moon shape. Repeat with the remaining tortillas and filling.
  7. Cook each quesadilla for 2 to 3 minutes per side over medium heat until golden brown and crisp, and the cheese is melted.
  8. Let rest for 1 minute, then slice into wedges.
  9. Serve hot with sour cream, extra salsa, and chopped cilantro if desired.

Notes

  • Freshly shredded cheese melts more smoothly than pre-shredded cheese.
  • Do not overfill the tortillas or they may be harder to flip.
  • For extra heat, add diced jalapeños or a pinch of chipotle powder.
  • Reheat leftovers in a skillet or air fryer for the best crisp texture.
