- 2 cups shredded cooked chicken
- 1 tablespoon olive oil
- 1 small onion, finely diced
- 1 medium bell pepper, finely diced
- 2 teaspoons taco seasoning
- 1/4 cup salsa
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 4 large flour tortillas
- 1 tablespoon butter or oil for the skillet
- Sour cream, for serving
- Extra salsa, for serving
- 2 tablespoons chopped cilantro, optional for serving
Instructions
- Heat a large skillet over medium heat.
- Add olive oil, onion, and bell pepper. Cook for 3 to 4 minutes until softened.
- Stir in the shredded chicken, taco seasoning, and salsa. Cook for 2 minutes until warmed through and well coated.
- Lightly grease the skillet with butter or oil.
- Lay one tortilla flat and add one-quarter of the cheddar and Monterey Jack cheese to one half. Spoon some of the chicken mixture over the cheese, then top with a little more cheese.
- Fold the tortilla over into a half moon shape. Repeat with the remaining tortillas and filling.
- Cook each quesadilla for 2 to 3 minutes per side over medium heat until golden brown and crisp, and the cheese is melted.
- Let rest for 1 minute, then slice into wedges.
- Serve hot with sour cream, extra salsa, and chopped cilantro if desired.
Notes
- Freshly shredded cheese melts more smoothly than pre-shredded cheese.
- Do not overfill the tortillas or they may be harder to flip.
- For extra heat, add diced jalapeños or a pinch of chipotle powder.
- Reheat leftovers in a skillet or air fryer for the best crisp texture.
