Description

A creamy chicken salad spooned into crispy puff pastry cups — perfect as an elegant appetizer or a light lunch.


Ingredients

  • 1 sheet puff pastry
  • 2 cups diced cooked chicken
  • 1/4 cup mayonnaise
  • 1/4 cup diced celery
  • 1/4 cup diced red grapes
  • 1 teaspoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon chopped dill (optional)

Instructions

  1. Preheat oven to 200°C (400°F). Cut the puff pastry into small squares and press into a mini muffin tin. Bake for 10-15 minutes until crispy and golden. Remove and let cool.
  2. Meanwhile, combine chicken, mayonnaise, diced celery, grapes, lemon juice, dill, and seasoning in a bowl. Mix well.
  3. Once the pastry cups have cooled, spoon the chicken salad mixture into each cup.
  4. Serve immediately or refrigerate until serving.

Notes

  • You can use store-bought rotisserie chicken for a quick option.
  • Add chopped apples or toasted almonds for additional texture.
  • These can be made a few hours in advance and chilled.
