- 1 sheet puff pastry
- 2 cups diced cooked chicken
- 1/4 cup mayonnaise
- 1/4 cup diced celery
- 1/4 cup diced red grapes
- 1 teaspoon lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon chopped dill (optional)
Instructions
- Preheat oven to 200°C (400°F). Cut the puff pastry into small squares and press into a mini muffin tin. Bake for 10-15 minutes until crispy and golden. Remove and let cool.
- Meanwhile, combine chicken, mayonnaise, diced celery, grapes, lemon juice, dill, and seasoning in a bowl. Mix well.
- Once the pastry cups have cooled, spoon the chicken salad mixture into each cup.
- Serve immediately or refrigerate until serving.
Notes
- You can use store-bought rotisserie chicken for a quick option.
- Add chopped apples or toasted almonds for additional texture.
- These can be made a few hours in advance and chilled.
